FLOOD THE FIELDS — EST. 1949

In 1949, south of Kaplan, Louisiana, rice farmer Voorhies Trahan did what no one had done — he flooded his harvested rice stubble and trapped wild crawfish in the same field. Rice in summer, crawfish in winter. Two crops, one field.

Biologist Percy Viosca Jr. gave him "full credit" for pioneering commercial crawfish farming in Louisiana rice fields. That one idea turned wild-caught bayou delicacy into a sustainable $300M industry — and built the culture we wear today.
